Weeknight Dinners: Simple BBQ Meatloaf

I feel like this time of the year is so busy that I often find myself slacking in the meal department.  If you're like me, then you'll appreciate today's recipe.  Here is a super easy and quick meal option that can be pulled off with things you may already have in your cabinet and refrigerator.  We have a favorite meatloaf recipe in our house.  It is really yummy and has been in our meal rotation for a while now. Ours uses a combination of bbq sauce and the traditional ketchup that you often see in meatloaf recipes.

IMG_5808The only ingredients needed are: ground beef or turkey, chopped onions (or fresh), Italian bread crumbs, your favorite bbq sauce (ours is Rendezvous sauce out of Memphis) and ketchup.

Mix all ingredients together with ground beef.  I do not measure everything exactly but mix in a bowl until it can be patted into a loaf without falling apart.

And if you really want to get crazy, you can stick a slice of cheese in the middle!

Spread into a loaf pan and cover with bbq sauce.

Bake at 350 degrees for 1 hour.

You should definitely try it. So easy and super yummy!
